I actually bought frozen leaf spinach which I thought worked well. I also rinsed the spinach , squeezed as much water out, then pressed the spinach between paper towels and left it in the refrigerator for a while. It helped to get all the water out.

1 - 8oz. cream cheese, softened
1/2C mayonnaise, I think my mom uses Miracle Whip, but I use straight up Mayo.
1/2C sour cream
1 envelope of Ranch Dip Mix
1 jar of bacon bits
4 green onions, chopped
1 pkg 8-10" flour tortillas

In a medium mixing bowl, combine cream cheese, sour cream and mayonnaise. Beat in Ranch dip mix. Add green onions, bacon bits and spinach. Separate the spinach and add a little at a time, mixing thoroughly. Spread the mixture onto the tortillas, leaving a 1/2" space around the edge. Roll up each tortilla tightly and wrap each individually in plastic wrap. Chill for several hours or overnight. To serve, cut off ends and then cut into 1/2" slices.

Using red or green tortillas would be a great alternative for the holidays.Fruit Jar Nickyhttps://www.blogger.com/profile/01005986621095045593noreply@blogger.comtag:blogger.com,1999:blog-17954880.post-91316270159357795512006-11-26T13:13:00.000-08:002006-11-26T13:13:00.000-08:00Did you strip off the peacock paper?
